Turkey Sausage Pasta with Spinach

This has been one of our go-to recipes for the longest time now.  This week, Mike actually asked for it specifically, which is a big thing considering usually when I ask him what he wants for dinner it's, "Oh, I don't know."  It had been a while since we'd made this recipe, and with the first bite, I wondered why it had been so long.  It's super simple, very easy and quick-- the perfect weeknight recipe.  This recipe comes from Skinnytaste, one of my absolute favorite food blogs.  I warned you guys-- I am not the most creative cook in coming up with my own recipes, but I know a good recipe and Gina's dishes make eating healthy a delicious experience!    This particular dish is great because it's easy, delicious and makes 6, 1 1/2 cup servings, so it will easily get you through a few meals for the week.  I hope you enjoy it as much as we do!

Turkey Sausage Pasta with Spinach
Adapted from Skinnytaste
Serves 6
  • 12 oz whole grain pasta (I used Barilla rotini)
  • 1 tsp olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 5 cloves garlic, chopped
  • 1 lb turkey sausage, removed from casing
  • 3 decent handfulls baby spinach
  • 1/4 c. grated parmigano reggiano, plus more for topping
  • 1/4 tsp crushed red pepper
  • s&p to taste
  1.  Cook pasta in large pot of salted water.
  2. While water boils, heat a large nonstick skillet over medium heat.  Add olive oil.  When hot, add onions, peppers, garlic, salt and pepper.
  3. Cook until soft, about 4-5 minutes.
  4. Add sausage, breaking up with a wooden spoon and cook until golden, about 6-8 minutes.
  5. Add spinach, cover and cook until wilted.  Remove the cover, stir and adjust s&p to taste.
  6. Add cooked pasta, red pepper flakes and parmigano reggiano.  Toss well and transfer to large serving bowl.
